Okay, ladies: you know I LOVE to cook…so posting this recipe should be interesting becuase the title of it makes it sound rather bland and boring…if not just plain icky.  They are YUMMY.  They are great to have frozen on hand for a lazy dinner night.  They serve up nicely with some egg noodles and a salad/squash (depending on the season).  They are HAM BALLS.

Ham Balls

1 lb. ground pork or turkey

1 lb. ground ham (I buy a small chunk of ham and grind it in my meat grinder…a food processor pulse would do the same thing)

2 eggs

3/4 cup milk

2/3 cup shredded wheat cereal


1 1/2 cups brown sugar

2/3 cup water

1/3 cup vinegar

3/4 t. ground mustard

In a bowl, combine pork, ham, eggs, milk, and cereal.  Mix well.  Shape into 1 1/2 – 2 inch balls.  Place in greased 13×9 pan.  In a saucepan combine sauce ingredients.  Bring to a boil over medium heat.  Reduce heat.  Simmer uncovered for 4 minutes.  Pour over ham balls and bake uncovered 60-70 minutes.  Bake at 325 in a glass pan (or 350 in a metal pan).  Makes 7-8 servings.

Note: I make a double batch, freeze them on cookie sheets, pop them into three seperate ziplocks the next day…and voila!- 3 dinners of ham ball goodness is ready to go in you freezer.  Yummers.  The egg noodles to compliment them are an easy pantry staple.
