Autumn Salad with Spicy Walnuts November 14, 2008

Scrumptious main dish salad out of a Spokane Junior League Cookbook.  Add some crusty bread on the side and you are good to go for dinner!

Autumn Salad with Spicy Walnuts

Walnuts:

3 T. butter, melted

1 t. salt

1 t. cinnamon

1/4 t. cayenne pepper (ground red pepper)

dash hot pepper sauce

1 1/4 cup walnuts, coarsely chopped

Dressing:

3 T. red wine vinegar

1/2 cup olive oil

1 T. plus 1 t. Dijon mustard

Salad:

2 heads red leaf lettuce, rinsed and torn (we have used romaine also)

2 Granny Smith apples, cut into bite size chunks (I use my apple peeler/slicer instead of doing chunks)

8 oz. feta cheese, crumbled

Combine walnut ingredients and stir to coat.  Place nuts on a cookie sheet and bake at 300 degrees for 15 minutes.  Cool on foil.  Combine dressing ingredients and mix well.  Just before serving toss lettuce, apple, cheese, and nuts with desired amount of dressing.  Serves 8-10.
