This is really super recipe! The entire Moffat Clan has incorporated it into the menu at one time or another. (Trust me, that’s quite a statement!) It’s easy, can be prepared ahead of time, and is a healthy recipe for you to share with your family. We eat it with a side of Spanish Rice, Tortilla Chips, or Mexican hard rolls of some kind. We add a sliced lime to the offerings at the table- for some reason being able to sqirt some lime juice on their dinner excites our kids. Yes, I know…they are a little weird. :-) I hope you enjoy the recipe!
