Okay, totally NOT good for you….but TOTALLY good. :-)
Caramel Apple Cheesecake
Crust: Combine 1 cup flour, 1/2 cup very finely chopped almonds, and 1/4 cup sugar. Cut in 1/2 cup cold margarine. Stir in 1/4 t. almond extract. Press into bottom of spring-form pan and up the sides a little. Chill 30 minutes.
Filling: Beat 16 oz. cream cheese with 1/2 cup sugar. Add 2 eggs and 1 t. vanilla. Beat until smooth. Pour over crust. Smooth the top.
Topping: Mix 4 cups thinly sliced apples, 1/3 cup sugar, and 1 t. cinnamon. Spoon over filling. Drizzle 1/2 to 1 cup caramel sauce over apples. Bake at 350 degrees for 1 hour and 10 minutes. Refrigerate. May use extra caramel sauce when serving.
