Soy Marinated Chicken Thighs September 3, 2008

We stumbled upon this super easy marinade this summer and have had it several times now.  It’s really easy, and really tasty.  Cooking Light recommends using it on steaks, chicken breasts, or pork tenderloin/chops too!

3 tablespoons low-sodium soy sauce

2 tablespoons extravirgin olive oil

2 teaspoons chopped fresh thyme (I use 1 t. dried instead)

8 (2-ounce) skinless, boneless chicken thighs

2 garlic cloves, minced

  1. Combine first 5 ingredients in a large zip-top plastic bag; seal. Marinate in refrigerator 4 hours or up to 24 hours, turning occasionally.
  2. Prepare grill to medium-high heat.
  3. Remove chicken from bag; discard marinade. Place chicken on grill rack coated with cooking spray; grill 3 minutes on each side or until done.
