Potato Salad with Beets July 18, 2008

My friend made this awesome potato salad with beets that I was a little afraid of but totally enjoyed. The whole thing turned fuschia! So, this is not a recipe for the unadventurous…. Also, I must add that I am making up this recipe because my friend is in the middle of moving (not Gretchen) and I don’t want to bug her. I tend to be a make-it-up-from-memory chef anyway and  I could not find a similar recipe online.

 

Beet & Potato Salad

8 Large red potatoes

2 cans beets (or I actually bought 5 medium sized beets and boiled them)

1 medium/large sweet onion, diced

1 green pepper

handful of fresh cilantro

3/4 cup mayo

splash of vinegar

salt to taste

Bring large pot of water to a boil. Add potatoes, boil for 20 minutes. Check 1 potato to see if they are soft enough to dice in 1 inch squares and not be too crunchy. (If not, try about 5 more minutes.) Rinse, peel, and dice potatoes. Add mayo and mix thoroughly. Add beets chopped in bite-size pieces. Dice onion & green pepper, adding them to the mix. Chop cilantro and add it, along with the rest of the ingredients. This was very tasty after being left overnight in the fridge. It really mellowed the onions and let the flavors meld. Some optional ingredients would be: 3 hard boiled eggs, 1 cup steamed baby carrots chopped, tsp sugar
