Greek Chicken Wraps

This is a tasty (and easy) recipe that we tried last weekend for lunch and I think it will be a repeat around here, especially during the summer!  You can grill the chicken when you make these, the night before, or even do up a big batch of grilled shredded chicken and freeze in quart sized bags with enough for a recipe (about 2 cups.)  I LOVE doing up a bunch of chicken at once so that I can pull it out for bbq pizza, salads and now wraps too!  We doubled the amount of veggies in the recipe from what was listed at allrecipes.com and added the feta cheese to this recipe since that just made it a little more ‘Greek’ to me :)  Enjoy!  ~Kate
INGREDIENTS:
6 Mission® 98% Fat Free
Burrito Size Flour Tortillas
4 boneless, skinless chicken
breasts
1/2 cup fat-free Italian dressing
1 cup diced tomatoes
1 (4 ounce) can chopped or sliced black
olives, drained
1 cup peeled and seeded cucumber, chopped
1 tablespoon fresh lemon juice
1 cup fat free sour cream
mixed with:
1 1/2 teaspoons minced garlic
1/2 teaspoon onion powder
2-4 cups assorted greens
feta cheese
DIRECTIONS:
1. Marinate chicken in dressing 2 hours to overnight.
2. Combine tomatoes, olives, cucumber, lemon juice, and 1/2 cup of the sour cream mixture. Reserve.
3. Grill chicken, let cool, and cut into very thin strips.
4. Spread each tortilla with 1 tablespoon sour cream mixture.
5. Lay salad greens on tortilla, top with vegetable mixture and chicken strips.
6. Fold in sides of tortilla and roll up tightly. Cut on a diagonal and serve.
